Carolina

History

Even if his name is unknown, the legend says that the Carolina was first made by a baker of the Seven Streets of Bilbao. His daughter loved the meringue, so he made an easy pastry for his child to eat the meringue easily. That is why the name of this pastry is Carolina, like the daughter of the baker.

Ingredients cake

  • 2 layers of pastry
  • 100 gram sugar
  • 100 gram flour
  • 3 eggs
  • 100 gram butter
  • 500 millilitres milk
  • 1 cinnamon stick
  • 1 lemon peel

Elaboration

To make the cake, you should make a circular form mould and cut the pastry with it. Insert those pieces of pastry in muffins’ molds and put them in the fridge. To make the fill you have to heat the milk with the lemon peel and the cinnamon stick divided half an hour.

Then strain the milk and heat it again with the butter. Before it boils, take it of from the fire. Sieve the flour and mix it with the sugar in a bowl. Add the eggs one by one in the dough and mix them until it is an homogeneous mass. Add the hot milk to the flour and eggs mix and when it is done, put it into the pastry molds.

Bake the pastry at 200 degrees for 10 minutes before reducing the temperature to 180 for another 10 minutes.

Elaboration

To make the meringue, you first need to mix the sugar and the egg-whites. Then, beat them with rods until they are stiff and add the vinegar. With this element, the meringue will be more glowing and white.

The Carolina

We asked Iratxe from the bakery I “Kurrusku“, what the most sold pastry was in her bakery and which out of the three traditional pastries she would recommend to the visitors of the bakery.

The Carolina is the favorite pastry from Iratxe. The next thing that we wanted to know, is how people outside Bilbao, eat the pastries. As we said before, we are with two Erasmus students and we had never heard and seen these pastries before we came to Bilbao. That also applies to Fleur. We asked her some questions about the pastries and she will try the Carolina for the first time, but is she eating it the good way?

As you could see, Fleur ate the Carolina for the first time. However, there is a special way to eat the Carolina! We also asked Iratxe from the bakery “Kurrusku” how the Carolina is made and how you should eat it.
